The neat egg: Review

By Jodi Truglio — April 30, 2019

“There is no sincerer love than the love of food.” -George Bernard Shaw

I would also like to add to the quote, there is no sincerer love than the love for a good vegan egg to use for baking.

With that being said, discovering a good vegan egg replacer that can be used for baking can be challenging especially if you have food allergies. Also, not all egg substitutes are created equal. Some of them can only be used when making specific dishes or they could alter the taste or texture of the food.

That is why I was relieved when I discovered “The neat egg”.  Neat is honestly the best way to describe it, since it served as a cure all to my past baking mishaps.

Up until recently my family use to have this little inside joke that whenever I would try to bake something it would usually burn or it would catch fire. It took me a few years and a long hiatus to come to the realization that it had a lot to do with the type of plant-based ingredient I was using to replace the egg and or dairy element in the recipe I was making at the time. I learned that using the wrong type of plant-based substitute could make something as simple as pancakes too wet or dry.

Never did I expect that “the neat egg” would have that special magic that would spark my interest to start baking again.

You might be wondering what is the The neat egg?  This plant-based egg is an easy-to-mix, all-natural egg replacement that is made with only two ingredients and shelf stable.

The first time I tried the “egg” I made waffles, which came out pretty good, so I decided to challenge the product and used it to replace 1 egg in my potato pancake recipe, which held up and came out perfectly browned without falling apart.

What I like about this product is that it is easy to use, all you need is to combine 1 tablespoon of neat egg mix with 2 tablespoons of water and that’s it!
