I love making this lovely pink latte as an alternative to coffee and matcha. It has a nice earthy flavor that is not too sweet making it perfect for fall.

Serves: 1 latte
- 8 ounces nondairy milk (I like Trader Joe’s Almond Milk)
- 1 teaspoon Beet powder
- 1/4 teaspoon dried Ginger or more if you like a little heat
- 2 pitted Dates or 1 teaspoon of Maple Syrup
Place the beet powder in a 12 ounce mug or cup.
Heat the milk in a small stovetop saucepan over medium heat for 1 to 2 minutes until hot but not scalding.
Froth the milk (e.g., handheld milk frother or in high speed blender if using dates).
Holding back the frothy portion, pour the milk into the mug. Whisk until blended.
Spoon frothy milk on top and serve.
