Vegan Food Review

I recently had the pleasure to try some vegan products from companies that are new to me. Below is a review of foods that are definitely keepers and you should try adding to your grocery list.

BOU: Mushroom Gravy Cube

The mushroom gravy cubes were a pleasant flavorful surprise that was easy to use and enhanced the taste of my food. I admit I never actually used them to make mushroom gravy. I felt they were better suited to add as an additional flavor component to the recipe I was making which saved a lot of time. Two of my favorite uses are adding  them to roasted vegetables or pasta for a light sauce with garlic and olive oil. The cubes are made with real mushroom and traditional seasonings, that are vegan certified and the perfect addition to any pantry.

Here is a recipe perfect for summer, courtesy of the BOU blog. 

Spinach, Sautéed Mushroom & Asparagus Salad with Balsamic BOU Mushroom Gravy Dressing


2 tablespoons finely diced shallots

3 tablespoons sherry vinegar

9 tablespoons olive oil

1 Mushroom Gravy BOU cube

1 lb cremini mushrooms, cleaned and sliced

Salt + pepper

6 ounces baby spinach

1 bunch fresh asparagus, cleaned and shaved

¼ cup toasted pumpkin seeds


In a bowl whisk the shallots, vinegar, pinch of salt together and let sit for 5 minutes. Then gradually begin to add 5 tablespoons of olive oil while simultaneously whisking.

Meanwhile, to make the BOU Mushroom Gravy, whisk 1 cube with 1/2 cup of boiling water over high heat.

Heat a saute pan over medium-high heat. Add 2 tablespoons of olive oil, BOU mushroom gravy, and let dissolve. Eventually add mushrooms, salt + pepper and sautée for about 5 minutes. Once done, set aside.

In a large mixing bowl toss, mushrooms, spinach, shaved asparagus and warm shallot vinaigrette, and toasted pumpkin seeds. Enjoy!

Organic Young Jackfruit Unseasoned Pieces

Let me start by saying that I am still relatively new to using Jackfruit, so you can imagine I wasn’t sure what to expect when I opened the package of the Young Jackfruit Unseasoned Pieces. However, once I got past the darker color and start to cook it and added some onion and vegan BBQ sauce, it made one of the most delicious vegan pulled pork that my mother and I had ever had. 







100% Organic Unsweetened Shredded Coconut

I recently learned that not all shredded coconut is equal, which led me to naming Edward & Sons Organic Unsweetened Shredded Coconut as my favorite one. I found so many uses for this product from sweet to savory dishes. For example try adding it to smoothies, vegan fried rice, breaded coconut tofu, vegan yogurt etc. I learned you can be incredibly creative with using the finely shredded coconut and expect everything you make to taste yummy without that overwhelming coconut flavor.

It was love at first bite. These maple nuts are a healthy guilty pleasure, that satisfies a sweet tooth and best of all they are vegan and organic. Go Nuts are the perfect sweet and salty blend of nuts that are coated with pure organic maple syrup and a pinch of sea salt. It is delicious by itself, but also taste great as a topper in salads and yogurt and can even be paired with vegan cheese or fruit such as apple.
